One Month Countdown

One month to go until the Pocatello Half-Marathon. I am nervous and need to seriously reform my eating habits (temporarily of course, since I have an obsession with cupcakes.). But, I've been sticking to my training calendar so I have hope that I can be ready.

Since I won't be eating cupcakes- YOU SHOULD.
Here is my favorite new recipe for Vanilla Buttermilk Cupcakes (Amber, take note since this is a shared passion...).

Cream together 1 cup of sugar, 3/4 cup butter. Add 2 eggs and 1 egg yolk, one at a time, blending well after each addition. Add 1 T vanilla. Mix together 1 1/2 cups flour, 1 1/4 tsp baking powder, 1/4 tsp soda, and 1/4 tsp salt (I leave the salt out when I use salted butter). Mix flour mixture in with butter mixture, alternating with 1/2 cup buttermilk. Bake at 350 for 20 minutes. Yield- 12 or 15 cupckaes. Cool and frost with your favorite icing. I used buttercream and wasn't sorry at all about that.

Keep up the training! It's only a 5K more than you ran this summer! Those cupcakes sound awesome! Unfortunately, I think I could blow 1050 cals that way REAL quick! :)
